L’iniziativa prevede la proposta ai clienti da parte dei ristoranti aderenti, di oli extravergini di oliva di qualità, appartenenti ad aziende della selezione provinciale, che ogni anno viene effettuata dalla Camera di Commercio di Firenze tramite la propria Azienda Speciale Laboratorio Chimico Merceologico.
